1. Grease or spray a baking pan
  2. Heat corn tortillas individually in skillet until flexible
  3. Place desired amount of grated or sliced cheddar cheese & onion (if desired) inside each tortilla & roll to a quarter size circumference
  4. Cover thoroughly with Red Enchilada Sauce
  5. Top with grated cheddar cheese
  6. Bake for 15 minutes @ 375°

Serve with Refried Beans
